Syrah (1977-79) from loose granite soils on 0.46 hectare on Les Serves near the top of the hill at Saint-Désirat, destemmed, 0.5-1gm SO2 applied when juice enters the vat, 21 day vinification at 28-30°C, 0.5-1gm SO2 applied when juice enters the vat, twice daily pumping overs, one cap punching at 1010 specific gravity, 1.5 gm – 2 gm SO2 applied after the malo, nothing after that, aged 40% new, 30% 1-year, 30% 2-year oak casks, 50% 350-litre, 50% 228-litres 11 months (until early 2010s aged 20% new, 80% 2-3 year 225-litre oak casks 11 months), “it’s our last site harvested, a more feminine wine, never has a high degree”, 3-3,300 b


full red colour; has a crunchy, fresh aroma that is based on black cherry, black pepper. The palate holds meaty depth, comes with veins of iron, blue fruit, is stimulating, varied, nicely challenging, has character. The tannins are still a bit raw. There is a good flinty close. 2016 ()

dark, pitchy robe. There is an ample basket of berries in the bouquet, loganberry, some reduction, mulberry in the second tier, some mocha. There is a cool strictness from the granite. The palate is sinewed within its floral gras richness, iron threads through it, a mineral, firm handshake on the close. This is intricate wine, not obvious: it’s a classic granite child. There is blood on the aftertaste. This is provocative, and for the true enthusiasts. It will open gradually. Character, STGT wine. It’s lip smacking and cool on the close – interesting. 12.5°. (new 228-litre cask) full, very dark robe. The nose has a free aroma, is very feminine, already expressive, velvet-like. Fine grain, light touch palate with a crisp texture on the outside of its richness. Fine, still powdery tannins. Needs time – three years, for instance. Complex wine – not an adjective I use often. 2020-22 Dec 2009

only 11 hl/ha this year, tiny yield. Very dark. Unusual aroma mix - coffee, tea bags, black fruit, vanilla. Good start to palate - well wrapped black fruit, some aromatic jam, its sweet side is appealing. Esp 2006 on. 2010-12 March 2005 Previously **(*) full robe; lingering black fruit aroma, clear and pretty. Prune, black fruits, some heat on attack - alcohol sticks out a bit now. More ensemble by late 2006. Food essential for it. 2012-13


thorough robe. Black fruit aroma, brambly and floral. Black stone fruits on attack, some leather, the tannins assert. Good structure, the wine gains through the palate. Esp from 2006 to let the acidity settle. 2010-12 March 2005 Previously Dec 2004 **(*) good, calm fruit aroma, well-knit. Palate fruit carries a granite coolness; nice, live wine with some core, very clear-cut. Upright, but pure. Now is good. 2010-11. STGT wine.

2001 ()

dark, savoury, beguiling black fruit nose; soft cassis, very rounded, good feel. Pure, gentle. Drink now.
